- 1 pound ground turkey
- 2 large russet potatoes, diced
- 1 medium yellow onion, chopped
- 3 garlic cloves, minced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add diced potatoes and cook for 8–10 minutes until golden and softened.
- Push potatoes to the side and add onions and garlic, cooking until fragrant.
- Stir everything together, then add ground turkey, breaking it up with a spoon.
- Season with paprika, thyme, salt, and pepper.
- Cook for 10–12 minutes, stirring occasionally, until turkey is browned and potatoes are tender.
- Garnish with chopped parsley and serve hot.
Notes
- Microwave potatoes for a few minutes before sautéing to speed up cooking.
- Add a splash of broth if pan gets too dry.
- Use sweet potatoes for a sweeter variation.
