Description

A cozy and flavorful one-pan meal made with ground turkey, crispy potatoes, onions, and warm spices, finished with fresh parsley. Perfect for weeknight dinners or meal prep.


Ingredients

  • 1 pound ground turkey
  • 2 large russet potatoes, diced
  • 1 medium yellow onion, chopped
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add diced potatoes and cook for 8–10 minutes until golden and softened.
  3. Push potatoes to the side and add onions and garlic, cooking until fragrant.
  4. Stir everything together, then add ground turkey, breaking it up with a spoon.
  5. Season with paprika, thyme, salt, and pepper.
  6. Cook for 10–12 minutes, stirring occasionally, until turkey is browned and potatoes are tender.
  7. Garnish with chopped parsley and serve hot.

Notes

  • Microwave potatoes for a few minutes before sautéing to speed up cooking.
  • Add a splash of broth if pan gets too dry.
  • Use sweet potatoes for a sweeter variation.
