  • 170g sour cream or 3/4 cup Greek yogurt
  • Zest and juice of 1/2 lime
  • 1/2 tsp sugar


Instructions

  • Marinate the Shrimp:
    In a bowl, combine shrimp, olive oil, taco seasoning, and lime juice. Marinate for 30 minutes.
  • Cook the Shrimp:
    Heat a skillet over medium heat and sauté the shrimp until fully cooked, about 3-4 minutes per side. Add any remaining marinade to the skillet during cooking.
  • Prepare the Salad:
    In a mixing bowl, combine diced cherry tomatoes, chopped onion, sweet corn, garlic powder, olive oil, and parsley. Season with salt and pepper to taste.
