Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch cake pan and line the bottom with parchment paper.
- In a large bowl, whisk eggs, granulated sugar, brown sugar, oil, and vanilla until smooth.
- In a separate bowl, combine flour, baking powder, cinnamon, and salt.
- Mix dry ingredients into wet until just combined. Gently fold in diced apples.
- Pour batter into prepared pan and smooth the top.
- Bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean.
- Cool for 10 minutes, then transfer to a wire rack. Dust with powdered sugar if desired before serving.
