- 1 pound dried white beans (450g)
- 2 tablespoons olive oil
- 1 medium yellow onion, diced
- 2 medium carrots, sliced
- 2 celery stalks, sliced
- 3 garlic cloves, minced
- 4 cups vegetable broth (1 liter)
- 2 cups water
- 1 bay leaf
- 1 teaspoon fresh thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Soak beans overnight, then drain and rinse.
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook 5 to 7 minutes.
- Add garlic and cook 1 minute.
- Add beans, vegetable broth, water, bay leaf, and thyme. Bring to simmer.
- Reduce heat and cook partially covered for 60 to 75 minutes until beans are tender.
- Season with salt and pepper. Simmer 5 more minutes.
- Remove bay leaf, stir in parsley, and serve warm.
Notes
- Salt at the end for tender skins.
- Mash some beans to thicken broth naturally.
- Store refrigerated up to 5 days.
