1 egg
2 egg yolks
3 tbsp cold water
1 tsp salt
2 cups flour
Instructions
Beat the Eggs:
Beat the egg and egg yolks until light and fluffy.
Add Remaining Ingredients:
Add the cold water, salt, and flour. Mix until combined. Knead the dough until smooth.
Roll the Dough:
On a floured surface, roll out the dough to about 1/8″ thickness.
Cut into Strips:
Using a pizza cutter or sharp knife, cut the dough into strips.
Cook the Noodles:
Bring a pot of water to a boil. Cook the noodles for 7-9 minutes or until they are tender.
Store:
You can store the noodles in the fridge for 2-3 days or freeze for 1-2 months.
Serve:
Serve the noodles however you like! They are especially delicious in homemade chicken soup.
Notes
If you prefer thicker noodles, you can roll the dough out slightly thicker.
To keep the noodles from sticking together when stored, lightly dust them with flour or allow them to air-dry before refrigerating or freezing.
