Description

These homemade egg noodles are simple, made with just five ingredients, and easy to prepare. Perfect for a hearty soup or any dish that calls for tender, fresh pasta.


Ingredients

  • 1 egg
  • 2 egg yolks
  • 3 tbsp cold water
  • 1 tsp salt
  • 2 cups flour


Instructions

  • Beat the Eggs:
    Beat the egg and egg yolks until light and fluffy.
  • Add Remaining Ingredients:
    Add the cold water, salt, and flour. Mix until combined. Knead the dough until smooth.
  • Roll the Dough:
    On a floured surface, roll out the dough to about 1/8″ thickness.
  • Cut into Strips:
    Using a pizza cutter or sharp knife, cut the dough into strips.
  • Cook the Noodles:
    Bring a pot of water to a boil. Cook the noodles for 7-9 minutes or until they are tender.
  • Store:
    You can store the noodles in the fridge for 2-3 days or freeze for 1-2 months.
  • Serve:
    Serve the noodles however you like! They are especially delicious in homemade chicken soup.

Notes

  • If you prefer thicker noodles, you can roll the dough out slightly thicker.
  • To keep the noodles from sticking together when stored, lightly dust them with flour or allow them to air-dry before refrigerating or freezing.
