- 1 1/2 teaspoons baking soda
- 2 teaspoons ground cinnamon

- 1/2 teaspoon salt
- 2 large eggs
- 1/2 cup brown sugar
- 3/4 cup honey
- 1/2 cup vegetable oil
- 1 cup strong brewed tea or coffee, cooled
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and grease or line a 9×5 inch loaf pan.
- In a bowl, whisk together flour, baking soda, cinnamon, ginger, cloves, and salt.
- In a separate bowl, whisk eggs, brown sugar, honey, oil, vanilla, and tea or coffee until smooth.
- Pour wet ingredients into the dry and mix until just combined.
- Pour batter into prepared pan and tap to remove air bubbles.
- Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack. Optional: brush top with warm honey.
- Slice and serve plain or with butter, cream cheese, or fresh fruit.
