Honey Lime Chicken Stuffed Avocados with Corn Salsa is a vibrant and healthy meal featuring juicy marinated chicken, fresh corn salsa, and creamy avocados. This quick and flavorful dish is perfect for lunch, dinner, or entertaining.

  • 1 lb boneless chicken breasts or thighs, diced
  • 3 tbsp honey
  • Juice + zest of 2 limes
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup corn (grilled or canned)
  • 2 tbsp red onion, finely chopped
  • 1 tbsp chopped cilantro
  • Juice of 1/2 lime
  • Salt to taste
  • 3 ripe avocados, halved and pitted
  • Lime wedges, for serving
  • Extra chopped cilantro for garnish

Instructions

  1. In a bowl, whisk together honey, lime juice, lime zest, olive oil, garlic, smoked paprika, cumin, salt, and pepper. Add diced chicken and toss to coat. Cover and refrigerate for at least 30 minutes.
  2. Heat a skillet or grill over medium heat. Cook the marinated chicken in batches, turning occasionally, until golden brown and cooked through (about 6–8 minutes). Let rest and set aside.
  3. In a mixing bowl, combine corn, red onion, cilantro, lime juice, and salt. Mix well, then add cooked chicken and stir to combine.
  4. Halve the avocados and remove pits. Scoop out about a tablespoon from each half to make space for filling.
  5. Generously fill each avocado half with the honey lime chicken and corn salsa mixture. Garnish with extra cilantro and serve with lime wedges.
