  • pounds boneless skinless chicken thighs or chicken breasts
  • ⅓ cup honey
  • 3 tablespoons Dijon mustard
  • 1 tablespoon whole grain mustard
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • ¼ cup chicken broth
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon chopped fresh parsley


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. In a mixing bowl whisk together honey, Dijon mustard, whole grain mustard, minced garlic, chicken broth, salt, and pepper.
  3. Place chicken in the skillet in a single layer.
  4. Sear the chicken for about 4 minutes on each side until lightly golden.
  5. Pour the honey mustard sauce over the chicken and reduce heat slightly.
  6. Simmer for 12 to 15 minutes until the chicken is cooked through and the sauce thickens.
  7. Spoon sauce over the chicken and sprinkle chopped parsley on top before serving.
