For the Cupcakes:

Instructions
- Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, beat the butter, honey, and sugar with an electric mixer until light and fluffy.
- Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, starting and ending with the dry ingredients. Mix until just combined.
- Gently fold in the diced peaches.
- Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
- Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
- In a large bowl, beat the cream cheese and butter together until smooth and creamy.
- Add the powdered sugar, one cup at a time, and beat until fluffy.
- Mix in the vanilla extract and honey (if using).
- Pipe or spread the frosting onto the cooled cupcakes. Garnish with thin peach slices, diced peaches, or a drizzle of honey for an extra touch of sweetness.
Notes
- Fresh peaches work best for the best flavor, but canned peaches can be used in a pinch. Make sure they are well-drained.
- For a lighter frosting, you can reduce the amount of powdered sugar, but it may not hold as well.
