For the Cupcakes:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda

  • 1/2 cup unsalted butter, softened
  • 1/2 cup honey
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1 cup diced fresh peaches (or canned peaches, drained and chopped)

For the Cream Cheese Frosting:

  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 1 tablespoon honey (optional, for extra flavor)

For Garnish:

  • Thin peach slices or diced peaches
  • Drizzle of honey

Instructions

  • Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
  • In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  • In a large bowl, beat the butter, honey, and sugar with an electric mixer until light and fluffy.
  • Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  • Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, starting and ending with the dry ingredients. Mix until just combined.
  • Gently fold in the diced peaches.
  • Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  • Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove from the oven and let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  • In a large bowl, beat the cream cheese and butter together until smooth and creamy.
  • Add the powdered sugar, one cup at a time, and beat until fluffy.
  • Mix in the vanilla extract and honey (if using).
  • Pipe or spread the frosting onto the cooled cupcakes. Garnish with thin peach slices, diced peaches, or a drizzle of honey for an extra touch of sweetness.

Notes

  • Fresh peaches work best for the best flavor, but canned peaches can be used in a pinch. Make sure they are well-drained.
  • For a lighter frosting, you can reduce the amount of powdered sugar, but it may not hold as well.
