Grilled Mozzarella BBQ Chicken Sandwiches are juicy chicken breasts smothered in BBQ sauce, topped with melty mozzarella, and grilled to perfection for a delicious summer meal.

  • 2 boneless, skinless chicken breasts (halved lengthwise)
  • 1/2 cup BBQ sauce
  • 4 slices mozzarella cheese
  • 4 sandwich rolls or buns
  • Butter for toasting buns (optional)
  • Lettuce, tomato, and red onion (optional, for serving)

Instructions

  1. Preheat your grill or grill pan to medium-high heat. Lightly oil the grates.
  2. Brush chicken breast halves with BBQ sauce on both sides.
  3. Grill chicken for 4-5 minutes per side, basting with more BBQ sauce, until cooked through and the internal temperature reaches 165°F.
  4. Top each chicken piece with a slice of mozzarella cheese during the last minute of grilling. Cover grill to melt the cheese.
  5. While the chicken grills, butter the sandwich rolls and toast them cut-side down on the grill until golden.
  6. Assemble sandwiches: Layer lettuce, tomato, and red onion (if using) on the bottom bun. Add grilled chicken with melted mozzarella. Top with more BBQ sauce if desired and finish with the top bun.
  7. Serve immediately and enjoy!
