Ingredients

Scale
  • 1 1/2 cups all purpose flour
  • 1/2 cup unsweetened baking cocoa
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup light brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 1 egg, room temperature
  • 2 tbsp water
  • 1 cup mini chocolate chips
  • 10 oz maraschino cherries (1 jar), drained, patted dry, chopped, patted dry again

Instructions

  1. In a medium bowl, whisk together flour, cocoa, baking soda, and salt. Set aside.
  2. In a large bowl, cream together brown sugar, granulated sugar, and melted butter until light and fluffy.
  3. Add egg, vanilla extract, and water to the sugar mixture; beat until well blended.
  4. Gradually stir in the dry ingredients until just combined.
  5. Fold in mini chocolate chips and chopped maraschino cherries.
  6. Cover and refrigerate dough for 1 hour.
  7. Preheat oven to 375°F (190°C). Line a cookie sheet with parchment paper or lightly grease it.
  8. Scoop out rounded tablespoons of dough onto the prepared cookie sheet. Dough will be thick.
  9. Bake for 7-8 minutes, or until cookies are just set. Do not overbake.
  10. Remove from oven and let cookies cool on a wire rack.
  11. Store in an airtight container.

Notes

  • Pat cherries dry thoroughly to prevent excess moisture in cookies.
  • Dough can be made ahead and chilled overnight for extra chewy texture.
  • Try white chocolate chips for a flavor twist.
  • Let cookies cool completely for best texture.
  • Store in a sealed container for up to 5 days, or freeze for longer storage.
