1 1/2 cups all purpose flour
1/2 cup unsweetened baking cocoa
1/2 tsp baking soda
1/2 tsp salt
3/4 cup light brown sugar
1/2 cup granulated sugar
1/2 cup unsalted butter, melted
1 tsp vanilla extract
1 egg, room temperature
2 tbsp water
1 cup mini chocolate chips
10 oz maraschino cherries (1 jar), drained, patted dry, chopped, patted dry again
Instructions
In a medium bowl, whisk together flour, cocoa, baking soda, and salt. Set aside.
In a large bowl, cream together brown sugar, granulated sugar, and melted butter until light and fluffy.
Add egg, vanilla extract, and water to the sugar mixture; beat until well blended.
Gradually stir in the dry ingredients until just combined.
Fold in mini chocolate chips and chopped maraschino cherries.
Cover and refrigerate dough for 1 hour.
Preheat oven to 375°F (190°C). Line a cookie sheet with parchment paper or lightly grease it.
Scoop out rounded tablespoons of dough onto the prepared cookie sheet. Dough will be thick.
Bake for 7-8 minutes, or until cookies are just set. Do not overbake.
Remove from oven and let cookies cool on a wire rack.
Store in an airtight container.
