1 pound lean ground beef
1 envelope taco seasoning
1/4 cup water
15 ounces can Rico’s nacho cheese sauce
2 cups prepared Mexican rice
2 tablespoons mayonnaise
1 tablespoon chipotle sauce
Sour cream, as desired
Tortilla strips, as desired
4 burrito size tortillas
2 cups shredded Colby jack cheese
Instructions
In a medium skillet over medium heat, brown and drain the ground beef.
Add taco seasoning and water to the drained beef. Cook for about 5 minutes until the sauce thickens slightly.
Mix mayonnaise with chipotle sauce to make the chipotle mayo.
For each tortilla, add nacho cheese, a quarter of the ground beef, and 1/2 cup rice.
Divide the chipotle sauce evenly among the four burritos.
Top with sour cream and tortilla strips. Fold the burritos up.
In a nonstick skillet over medium heat, add 1/4 cup shredded cheese. Place a burrito seam-side down on the cheese. Cook until cheese is browned and adhered to the burrito.
Lift burrito with a spatula, sprinkle another 1/4 cup cheese in the pan, and flip burrito onto the new cheese side. Cook until browned and crispy.
Repeat with remaining burritos. Serve hot and enjoy!

Customize with your favorite toppings like jalapeños or guacamole.
For extra crunch, add more tortilla strips before folding.
Use freshly shredded cheese for best melting.
