Description

Ingredients

  • 2 cups plus 2 tablespoons all-purpose flour (255g)
  • 1¼ teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup granulated sugar (150g)
  • ½ cup unsalted butter, softened (113g)
  • 1 tablespoon orange zest (about 2 oranges)
  • 1 large egg
  • ½ cup fresh orange juice (120ml)


Instructions

  1. Preheat the oven to 375°F (190°C). Line two large baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large mixing bowl or the bowl of a stand mixer with the paddle attachment, beat the sugar, butter, and orange zest together on medium speed until light and fluffy, about 3 minutes. Add the egg and beat until well combined.
  4. With the mixer on low speed, add the flour mixture, alternating with the orange juice, until fully combined. Stop to scrape down the bowl as needed.
  5. Scoop the dough into 1-tablespoon balls and place onto the prepared cookie sheets, spacing them about 2 inches apart.
  6. Bake one sheet at a time for 10 minutes, or until the centers appear dry and feel firm to the touch.
  7. Let cookies cool for a few minutes on the baking sheet, then transfer to a wire rack to cool completely.

Notes

  • For extra orange flavor, add a little more zest or a few drops of orange extract.
  • Cookies can be stored in an airtight container at room temperature for up to 5 days.
  • Optional: drizzle with a simple orange glaze made from powdered sugar and orange juice.
