  • 1 egg (or 1 tbsp egg substitute for a smaller serving)

For the Cream Cheese Frosting:

  • 2 tbsp cream cheese, softened
  • 1 tbsp unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1/4 tsp vanilla extract
  • 12 tbsp whole milk (to reach desired consistency)

For Garnishing:

  • Mini heart-shaped sprinkles (optional)
  • Red velvet cake crumbs (optional)

Instructions

  • Mix Dry Ingredients: In a microwave-safe mug, whisk together the flour, cocoa powder, baking powder, sugar, and salt.
  • Add Wet Ingredients: Add the milk, melted butter, vanilla extract, red food coloring, and egg to the dry ingredients. Mix well until smooth and no lumps remain.
  • Microwave the Mug Cake: Microwave the mug on high for 1 minute and 30 seconds to 2 minutes, depending on your microwave’s strength. The cake should rise and look set in the middle. Be careful not to overcook, as the cake will continue to cook in the mug once removed.
  • Make the Frosting: In a small bowl, beat together the softened cream cheese, butter, powdered sugar, and vanilla extract. Add milk, a little at a time, until the frosting reaches your desired consistency (smooth and spreadable).
  • Top with Frosting: Once the cake has cooled for a minute, spread the cream cheese frosting generously over the top of the cake.
  • Garnish: Add heart-shaped sprinkles and red velvet cake crumbs on top for a festive touch.
