Description

Juicy grilled chicken thighs marinated in a sweet and savory Hawaiian-style glaze made with pineapple juice, soy sauce, garlic, and ginger. Perfectly caramelized and full of island flavor.


Ingredients

  • 4 lb chicken thighs (bone-in, skin-on preferred)
  • ¾ cup pineapple juice
  • ½ cup soy sauce
  • ⅓ cup brown sugar (packed)
  • ¼ cup ketchup
  • 2 Tbsp rice vinegar or apple cider vinegar
  • 1 Tbsp sesame oil
  • 3 cloves garlic, minced
  • 1 Tbsp fresh ginger, grated
  • 12 tsp sriracha or chili garlic sauce (optional)
  • Salt and pepper, to taste
  • Garnish: chopped green onions, sesame seeds, lime wedges


Instructions

  1. Mix pineapple juice, soy sauce, brown sugar, ketchup, vinegar, sesame oil, garlic, ginger, and sriracha. Marinate chicken in this mixture for 2–12 hours.
  2. Preheat grill or oven to 425°F (220°C). Remove chicken from marinade, pat dry, and season lightly with salt and pepper.
  3. Grill or roast chicken thighs for 8–10 minutes per side, turning occasionally. Brush with reserved marinade during final minutes.
  4. Cook until caramelized and internal temp reaches 165°F (74°C).
  5. Let rest 5 minutes. Garnish and serve hot with sides of choice.

Notes

  • Use boneless thighs for faster cooking if desired.
  • Finish under broiler or open flame for added caramelization.
