Ingredients
- Collard Greens: 1 large bunch (about 12 oz), stems removed and chopped
- Yellow Onion: 1 medium, chopped
- Garlic Cloves: 4, minced
- Vegetable Broth: 3 cups, for deep flavor
- Olive Oil: 2 tablespoons, for sautéing
- Apple Cider Vinegar: 1 tablespoon, added at the end
- Smoked Paprika: 1 teaspoon, adds a smoky touch
- Salt: 1 teaspoon, or to taste
- Black Pepper: ½ teaspoon, for subtle heat
- Crushed Red Pepper Flakes (optional): ¼ teaspoon, for a kick
Instructions
- Set Instant Pot to sauté mode. Heat olive oil and cook chopped onion for 3–4 minutes. Add garlic and cook for 1 more minute.
- Pour in broth and stir in chopped collard greens a handful at a time.
- Add salt, pepper, smoked paprika, and red pepper flakes if using. Stir well.
- Secure lid and cook on high pressure for 10 minutes. Allow natural release for 10–15 minutes.
- Open lid, stir in apple cider vinegar, and adjust seasoning as needed.
- Serve hot with some broth spooned over the top.
