Description

Instant Pot Collard Greens are tender, savory, and packed with Southern flavor. Made in a fraction of the time, these vegan greens are simmered in a rich vegetable broth with onions, garlic, and smoky seasoning—perfect as a side or a hearty main dish.


Ingredients

  • Collard Greens: 1 large bunch (about 12 oz), stems removed and chopped
  • Yellow Onion: 1 medium, chopped
  • Garlic Cloves: 4, minced
  • Vegetable Broth: 3 cups, for deep flavor
  • Olive Oil: 2 tablespoons, for sautéing
  • Apple Cider Vinegar: 1 tablespoon, added at the end
  • Smoked Paprika: 1 teaspoon, adds a smoky touch
  • Salt: 1 teaspoon, or to taste
  • Black Pepper: ½ teaspoon, for subtle heat
  • Crushed Red Pepper Flakes (optional): ¼ teaspoon, for a kick


Instructions

  1. Set Instant Pot to sauté mode. Heat olive oil and cook chopped onion for 3–4 minutes. Add garlic and cook for 1 more minute.
  2. Pour in broth and stir in chopped collard greens a handful at a time.
  3. Add salt, pepper, smoked paprika, and red pepper flakes if using. Stir well.
  4. Secure lid and cook on high pressure for 10 minutes. Allow natural release for 10–15 minutes.
  5. Open lid, stir in apple cider vinegar, and adjust seasoning as needed.
  6. Serve hot with some broth spooned over the top.

Notes

  • Letting the pressure release naturally keeps greens tender and flavorful.
  • Vinegar at the end adds brightness and balances the dish.
  • Chop greens evenly so they cook at the same rate.
