Italian Almond Sugar Cookies are soft, chewy, and full of almond flavor. These delicate cookies are lightly sweetened, topped with sliced almonds, and perfect for any occasion, from holidays to afternoon tea.

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp almond extract
  • 2 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup sliced almonds
  • 2 tbsp coarse sugar (for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in the almond extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add dry ingredients to the wet mixture and mix until combined.
  5. Roll tablespoons of dough into balls and place on the prepared baking sheet.
  6. Flatten each ball slightly, press a few sliced almonds on top, and sprinkle with coarse sugar.
  7. Bake for 10-12 minutes, or until edges are lightly golden.
  8. Cool on a wire rack before serving.

Notes

  • For extra almond flavor, add 1/4 cup finely ground almonds to the dough.
  • Drizzle with a light glaze made from powdered sugar and milk for a festive touch.
  • Store in an airtight container to keep cookies soft.
