A rich and flavorful pasta dish featuring spicy Italian sausage, bell peppers, and a zesty tomato-wine sauce. With a kick from red pepper flakes and the freshness of basil and parsley, this dish is a delicious twist on classic Italian flavors.

Ingredients

  • 8 ounces Pappardelle noodles (or wide fettuccine noodles)
  • 1 pound Spicy Italian Sausage
  • 1 medium onion, thinly sliced
  • 1 large can crushed tomatoes
  • ½ cup white wine
  • 1 yellow bell pepper, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 3 cloves freshly minced garlic
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon red pepper flakes
  • 3 teaspoons parsley flakes
  • ¼ cup basil leaves, sliced very thin
  • Olive oil
  • Salt and pepper to taste (optional)

Instructions

FIRST STEP:

  1. Cook the Pappardelle (or fettuccine) noodles according to the package directions.
  2. Once al dente, drain and rinse the noodles, then set them aside.

SECOND STEP:

  1. In a large skillet, heat olive oil over medium heat.
  2. Crumble the spicy Italian sausage into the pan and cook until fully browned and cooked through.
  3. Once cooked, remove the sausage from the pan and set it aside.

THIRD STEP:

  1. If necessary, add more oil to the skillet using the sausage drippings.
  2. Add the thinly sliced onion, bell peppers, and Italian seasoning to the pan. Sauté until softened.
  3. Stir in the minced garlic and add salt and pepper to taste.

FOURTH STEP:

  1. Pour in the white wine and allow it to simmer for a couple of minutes until it cooks down slightly.
  2. Add the crushed tomatoes to the pan and return the cooked sausage to the skillet.
  3. Remove from heat, then stir in the sliced basil and parsley.

FIFTH STEP:

  1. Add the drained pasta to the pan and use tongs to toss everything together, ensuring the noodles are well-coated with the sauce and vegetables.

Notes

  • For a milder version, use sweet Italian sausage instead of spicy sausage.
  • Feel free to add more herbs or red pepper flakes to adjust the flavor to your preference.
  • You can also top with freshly grated Parmesan cheese before serving.
