Ingredients

  • All-Purpose Flour: 2 cups
  • Baking Powder: 2 teaspoons
  • Granulated Sugar: 2 tablespoons
  • Salt: 1/4 teaspoon
  • Eggs: 2 large
  • Milk: 3/4 cup
  • Vanilla Extract: 1 teaspoon
  • Ricotta Cheese: 1 cup
  • Vegetable Oil: For frying
  • Powdered Sugar: For dusting


Instructions

  1. Preheat Your Equipment: Heat vegetable oil in a heavy-bottomed pot over medium heat until it reaches 350°F (175°C).
  2. Combine Ingredients: In a bowl, whisk together flour, baking powder, sugar, and salt. In another bowl, mix ricotta, eggs, milk, and vanilla. Gradually combine wet and dry ingredients to form a thick batter.
  3. Prepare Your Cooking Vessel: Line a tray with paper towels and place a cooling rack on top for draining the fried zeppole.
  4. Assemble the Dish: Using a cookie scoop or two spoons, carefully drop tablespoon-sized portions of batter into the hot oil.
  5. Cook to Perfection: Fry in batches for 3–4 minutes, turning occasionally, until golden brown and puffed. Don’t overcrowd the pot.
  6. Finishing Touches: Transfer to the rack to drain. Let cool slightly.
