- 1 cup Cooked Rice
- 1/2 cup Bell Pepper, finely diced

- 1 tablespoon Cajun Seasoning
- 1 tablespoon Olive Oil
- 1/2 teaspoon Salt
- 1/4 teaspoon Black Pepper
- 2 tablespoons Green Onion, chopped (optional)
- 12 Mini Tart Shells or Crackers

- Preheat Your Equipment: Preheat oven to 375°F (190°C) if baking tart shells or warming bites.
- Combine Ingredients: Heat olive oil in a skillet. Sauté onion and bell pepper for 3 minutes. Add garlic, shrimp, and sausage. Cook until shrimp is opaque.
- Prepare Your Cooking Vessel: If baking, grease mini muffin tin. If serving on crackers, place them on a platter.
- Assemble the Dish: In a bowl, combine skillet mixture with rice, Cajun seasoning, salt, and pepper. Spoon into shells or onto crackers.
