Description

Soft, coffee-infused Java Muffins with a moist crumb and optional chocolate chips, topped with a light coffee glaze. Perfect for mornings, snacks, or coffee breaks.


Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup strong brewed coffee, cooled
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips (optional)
  • 1/2 cup powdered sugar (for glaze)


Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners or grease lightly.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, mix cooled coffee, oil, eggs, and vanilla extract.
  4. Pour wet ingredients into dry and stir just until combined. Fold in chocolate chips if using.
  5. Divide batter evenly into muffin cups, filling each 2/3 full.
  6. Bake for 18–22 minutes or until a toothpick inserted comes out clean. Let cool 5 minutes in pan, then transfer to a wire rack.
  7. Mix powdered sugar with a splash of coffee to make glaze and drizzle over cooled muffins.

Notes

  • Use espresso or cold brew for deeper coffee flavor.
  • Add 1/4 cup sour cream or yogurt for extra moist muffins.
  • Freeze unglazed muffins and glaze just before serving.
