Description
Soft, coffee-infused Java Muffins with a moist crumb and optional chocolate chips, topped with a light coffee glaze. Perfect for mornings, snacks, or coffee breaks.

- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup strong brewed coffee, cooled
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup mini chocolate chips (optional)
- 1/2 cup powdered sugar (for glaze)
Instructions
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners or grease lightly.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, mix cooled coffee, oil, eggs, and vanilla extract.
- Pour wet ingredients into dry and stir just until combined. Fold in chocolate chips if using.
- Divide batter evenly into muffin cups, filling each 2/3 full.
- Bake for 18–22 minutes or until a toothpick inserted comes out clean. Let cool 5 minutes in pan, then transfer to a wire rack.
- Mix powdered sugar with a splash of coffee to make glaze and drizzle over cooled muffins.
Notes
- Use espresso or cold brew for deeper coffee flavor.
- Add 1/4 cup sour cream or yogurt for extra moist muffins.
- Freeze unglazed muffins and glaze just before serving.
