- 3 to 4 pounds spiral-cut beef roast
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 3 tablespoons brown sugar
- 1 cup beef broth
- 2 tablespoons Dijon mustard
- 1 teaspoon black pepper
- 1 tablespoon fresh rosemary, chopped
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl combine olive oil, brown sugar, garlic powder, onion powder, paprika, Dijon mustard, black pepper, and half of the beef broth to create a glaze.
- Place the spiral-cut beef roast in a roasting pan and pour the remaining broth into the bottom of the pan.
- Brush the glaze over the roast, allowing it to settle between the spiral slices.
- Cover loosely with foil and roast for 45 minutes, basting every 15 minutes with the pan juices.
- Remove the foil and roast for another 15 minutes until the glaze caramelizes.
- Let the roast rest for 10 minutes before separating the slices and serving.

- Baste the roast regularly to keep it juicy and flavorful.
- Allow the meat to rest before serving so the juices redistribute.
- Add extra broth to the pan if it begins to dry during roasting.
