- 500 grams lamb intestines (cleaned)
- 2 medium tomatoes (finely diced)
- 2 green bell peppers (finely diced)
- 1 small onion (finely diced)
- 1 teaspoon dried oregano
- 1 teaspoon chili flakes
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2–3 crusty sandwich rolls or bread
Instructions
- Preheat your grill or grill pan over medium-high heat until hot.
- In a bowl, mix tomatoes, green peppers, onion, oregano, chili flakes, cumin, salt, and pepper.
- Lightly oil the grill or pan with olive oil and cook the intestines slowly until firm and fully cooked.
- Finely chop the cooked intestines and mix them into the bowl with the seasoned vegetables.
- Return the mixture to the pan and sauté until well combined, crispy, and golden.
- Toast the bread until crusty and lightly charred on the edges.
- Stuff the kokoreç mixture into the bread or serve on a platter. Add lemon wedges if desired and enjoy hot.
