Lasagna Soup is a hearty, comforting dish featuring all the classic lasagna flavors—rich meat sauce, creamy cheese, and tender pasta—served in a cozy soup form for an easy one-pot meal.

Ingredients

Scale
  • 3 tablespoon olive oil or pork lard
  • 2 yellow onions, diced
  • 2 garlic cloves, minced
  • 1 tablespoon garlic powder
  • 1 teaspoon dried oregano
  • ½ teaspoon chili flakes (adjust for heat)
  • 2 teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 tablespoon smoked paprika
  • 2 tablespoon tomato paste
  • 10 oz ground beef (300g)
  • 10 oz ground pork (300g)
  • 3 cups tomato sauce
  • 2 cups heavy cream
  • 2 cups chicken broth
  • 1 teaspoon sugar
  • 1 cup water
  • 8 oz lasagna sheets, broken into pieces
  • 1 cup shredded mozzarella (measure with your heart)
  • Ricotta cheese and fresh basil for serving (optional)
  • Chopped parsley (optional)

Instructions

  1. In a large pot, heat olive oil or lard over medium heat. Add diced onions and minced garlic, sautéing for about 5 minutes until onions are soft and translucent.
  2. Stir in garlic powder, oregano, chili flakes, 1 teaspoon salt, pepper, and smoked paprika. Cook for 1-2 minutes until fragrant. Add tomato paste, mix well, and cook for another minute.
  3. Add ground beef and pork, breaking them up as they cook. Sauté until browned, about 5 more minutes.
  4. Pour in tomato sauce, heavy cream, chicken broth, and water. Stir well, making sure everything is combined. Add 1 teaspoon sugar.
  5. Once the soup starts to simmer, add broken lasagna sheets. Stir occasionally and cook uncovered for 20-30 minutes, or until pasta is tender.
  6. Remove from heat and stir in shredded mozzarella until melted. Add chopped parsley if desired and mix well.
  7. Ladle soup into bowls. Top each with a dollop of ricotta cheese and fresh basil if desired. Serve and enjoy!

Notes

  • Adjust chili flakes to control the heat.
  • For a lighter version, use ground turkey or chicken.
  • Add spinach or other greens at the end for extra nutrition.
  • Great for meal prep—flavors develop even more after a day in the fridge.
