Lasagna Soup is a hearty, comforting dish featuring all the classic lasagna flavors—rich meat sauce, creamy cheese, and tender pasta—served in a cozy soup form for an easy one-pot meal.

- 3 tablespoon olive oil or pork lard
- 2 yellow onions, diced
- 2 garlic cloves, minced
- 1 tablespoon garlic powder
- 1 teaspoon dried oregano
- ½ teaspoon chili flakes (adjust for heat)
- 2 teaspoon salt
- ½ teaspoon ground black pepper
- 1 tablespoon smoked paprika
- 2 tablespoon tomato paste
- 10 oz ground beef (300g)
- 10 oz ground pork (300g)
- 3 cups tomato sauce
- 2 cups heavy cream
- 2 cups chicken broth
- 1 teaspoon sugar
- 1 cup water
- 8 oz lasagna sheets, broken into pieces
- 1 cup shredded mozzarella (measure with your heart)
- Ricotta cheese and fresh basil for serving (optional)
- Chopped parsley (optional)
Instructions
- In a large pot, heat olive oil or lard over medium heat. Add diced onions and minced garlic, sautéing for about 5 minutes until onions are soft and translucent.
- Stir in garlic powder, oregano, chili flakes, 1 teaspoon salt, pepper, and smoked paprika. Cook for 1-2 minutes until fragrant. Add tomato paste, mix well, and cook for another minute.
- Add ground beef and pork, breaking them up as they cook. Sauté until browned, about 5 more minutes.
- Pour in tomato sauce, heavy cream, chicken broth, and water. Stir well, making sure everything is combined. Add 1 teaspoon sugar.
- Once the soup starts to simmer, add broken lasagna sheets. Stir occasionally and cook uncovered for 20-30 minutes, or until pasta is tender.
- Remove from heat and stir in shredded mozzarella until melted. Add chopped parsley if desired and mix well.
- Ladle soup into bowls. Top each with a dollop of ricotta cheese and fresh basil if desired. Serve and enjoy!
Notes
- Adjust chili flakes to control the heat.
- For a lighter version, use ground turkey or chicken.
- Add spinach or other greens at the end for extra nutrition.
