1 tablespoon olive oil
2 tablespoons butter
1/2 medium onion, chopped
3 cloves garlic, minced
1/4 teaspoon Italian seasoning
1 cup uncooked orzo pasta
2 cups chicken broth
2 tablespoons lemon juice
1 cup heavy/whipping cream
2 cups cooked shredded or rotisserie chicken
1/2 cup freshly grated parmesan cheese
2 cups packed fresh baby spinach
Salt & pepper, to taste
Instructions
In a pot over medium-high heat, add olive oil, butter, and chopped onion. Sauté for 3-4 minutes until translucent.
Add garlic, Italian seasoning, and orzo. Stir frequently and cook for 2-3 minutes to toast the orzo lightly and build flavor.
Pour in chicken broth, lemon juice, and cream. Stir and bring to a gentle bubble. Reduce heat to medium or medium-low, and simmer uncovered for about 10 minutes, stirring often, until orzo is tender.
Mix in the shredded chicken and stir to combine.
Remove from heat, stir in grated parmesan and baby spinach. Cover the pot and let sit for 3–5 minutes to thicken. Season with salt and pepper to taste and serve immediately.
Notes
Use rotisserie chicken for convenience and extra flavor.
Be sure to stir frequently to prevent orzo from sticking or overcooking.
If sauce thickens too much, add a splash of broth or cream before serving.
Fresh lemon juice is recommended for the best flavor.
