    • ½ cup unsalted butter
    • 1 cup granulated sugar
    • ½ cup milk
    • 1 Tbsp lemon zest (from about 1 lemon)
    • 2 Tbsp fresh lemon juice
    • 1 tsp vanilla extract
    • Pinch of salt
  • For the lemon glaze:
    • 1 cup powdered sugar
    • 23 Tbsp fresh lemon juice
    • ½ tsp lemon zest

Instructions

  • Prepare a baking sheet: Line with parchment paper or a silicone mat.
  • Cook the wet ingredients: In a medium saucepan over medium heat, melt the butter, then stir in the sugar, milk, and lemon zest. Bring to a gentle boil and cook for 1-2 minutes while stirring.
  • Mix in the oats: Remove from heat and stir in the oats, lemon juice, vanilla extract, and a pinch of salt. Mix well until everything is combined.
  • Form the cookies: Scoop about 1 ½ tablespoons of the mixture onto the prepared baking sheet, shaping them into flat cookies. Let them set at room temperature for 30-45 minutes or until firm.
  • Make the glaze: In a small bowl, whisk together powdered sugar, lemon juice, and zest until smooth.
  • Glaze & Set: Drizzle or dip the cookies in the lemon glaze and allow them to set for 15 minutes until the glaze hardens.

  • Store cookies in an airtight container at room temperature for up to 3 days.
  • For a stronger lemon flavor, increase the lemon zest or juice in the glaze.
