Ingredients

  • Baking Soda: 1 teaspoon
  • Salt: ½ teaspoon
  • Unsalted Butter: 1 cup (softened)
  • Granulated Sugar: 1 ½ cups (plus extra for rolling)
  • Lemon Zest: 2 tablespoons
  • Lemon Juice: 2 tablespoons (freshly squeezed)
  • Egg: 1 large
  • Vanilla Extract: 1 teaspoon


Instructions

  1. Preheat Your Equipment: Preheat oven to 350°F and line baking sheets with parchment.
  2. Mix Dry Ingredients: Whisk flour, baking soda, and salt together.
  3. Cream Butter & Sugar: Beat butter, sugar, and lemon zest until light and fluffy. Add egg, lemon juice, and vanilla; mix well.
  4. Combine Wet & Dry: Add dry mixture gradually to wet, mixing until just combined.
  5. Shape the Cookies: Scoop tablespoon-sized dough balls, roll in sugar, and place 2 inches apart.
