- 6 ripe plums, halved and pitted
- ¾ cup ground almonds
- 1 cup plain flour
- 1½ teaspoons baking powder
- 3 large eggs
- ½ cup unsalted butter, melted and slightly cooled
- ½ cup Greek yogurt
- 3 tablespoons honey
- 1 teaspoon vanilla extract
- ¼ cup flaked almonds
Instructions
- Preheat oven to 350°F (180°C) and line a medium rectangular tray with parchment paper.
- In a bowl, whisk eggs, melted butter, yogurt, honey, and vanilla until smooth.
- In another bowl, mix flour, ground almonds, and baking powder. Gently fold dry ingredients into wet mixture until just combined.
- Pour batter into the prepared tray and spread evenly.
- Arrange plum halves on top, cut side up, and scatter flaked almonds.
- Bake for 35–40 minutes until golden and a skewer inserted in the center comes out clean.
- Drizzle with warm honey if desired and let cool before slicing.
Notes
- Use firm but ripe plums for best texture.
- Don’t overmix the batter to keep it light and fluffy.
- Let the cake cool completely for easier slicing.
- Can be frozen in slices for future treats.
