These charming Linzer Heart Cookies are a delightful treat for Valentine’s Day or any special occasion. With a buttery almond-flavored base and a rich, velvety chocolate filling, they’re a perfect sweet bite for sharing with loved ones!

For the Cookies:

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 1 cup almond flour (or finely ground almonds)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract (optional)
  • 1/4 tsp salt

For the Chocolate Filling:

  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream

For Garnishing:

  • Powdered sugar, for dusting

Instructions

  • Cream Butter and Sugar: In a large bowl, beat the softened butter and granulated sugar together until light and fluffy.
  • Add Wet Ingredients: Mix in the egg, vanilla extract, and almond extract (if using).
  • Incorporate Dry Ingredients: Gradually add the all-purpose flour, almond flour, and salt. Mix until the dough comes together.
  • Chill Dough: Divide the dough into two discs, wrap them in plastic wrap, and refrigerate for at least 1 hour.
  • Preheat Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  • Roll Out Dough: On a floured surface, roll out one disc of dough to about 1/8-inch thickness.
  • Cut Cookie Shapes: Use a large heart-shaped cookie cutter to cut out the base cookies. For the tops, use the same heart cutter plus a smaller heart cutter to create heart “windows.”
  • Bake: Place the cookies on the prepared baking sheets and bake for 10-12 minutes, or until the edges are lightly golden. Cool completely on wire racks.
  • Make the Chocolate Filling: In a small saucepan, heat the heavy cream over low heat until warm (do not boil). Remove from heat and stir in the chocolate chips until smooth. Let the mixture cool slightly to thicken.
  • Spread Filling: Spread a small amount of the chocolate filling on the flat side of each base cookie.
  • Top with Window Cookies: Place the cut-out “window” cookies on top, pressing gently to create a sandwich.
  • Dust with Powdered Sugar: Sift powdered sugar over the tops of the cookies for a beautiful finish.

Notes

  • Chill the dough well to prevent it from becoming too soft while rolling and cutting.
  • If you prefer a smoother filling, you can add a tablespoon of butter to the chocolate mixture for extra richness.
