Ingredients

Scale
  • For the Fries:

    • 250g potato, washed and sliced into thin strips
    • 1 tsp olive oil or low-calorie spray
    • 2 tsp paprika
    • 2 tsp garlic granules
    • Salt and pepper to taste
  • For the Buffalo Chicken:

    • 100g uncooked chicken breast
    • 1/2 pepper, chopped
    • 2 tbsp Frank’s Red Hot Buffalo Sauce
    • 1 tbsp light ranch
    • 15g light cream cheese
    • 15g low-fat cheddar cheese
  • For Toppings:

    • 15g light mozzarella or cheddar cheese, shredded
    • 1 tbsp light ranch (mixed with 1 tbsp water)
    • Fresh parsley, chopped

Instructions

  • Prepare the Fries:

    • Preheat an air fryer to 200°C (392°F).
    • Toss sliced potatoes with olive oil, paprika, garlic granules, salt, and pepper.
    • Air fry for 20-25 minutes, shaking halfway through, until crispy and golden.
  • Cook the Chicken:

    • Place chicken breast on a sheet of baking paper. Season with paprika, garlic granules, salt, and pepper. Cover with another sheet of baking paper and flatten slightly using a rolling pin.
    • Heat a pan sprayed with oil over medium heat. Cook the chicken for 5-8 minutes per side until cooked through. Add a splash of water if needed to prevent sticking.
    • Shred the cooked chicken using two forks.
  • Prepare the Buffalo Sauce:

    • In a bowl, whisk together Frank’s Buffalo Sauce, ranch, cream cheese, and cheddar.
    • Mix in the shredded chicken and chopped pepper. Cook in the same pan for a few minutes until heated through.
  • Assemble the Dish:

    • Place the cooked fries in an oven-safe dish. Top with the buffalo chicken mixture.
    • Sprinkle with mozzarella or cheddar and grill for 5 minutes until the cheese melts.
  • Garnish and Serve:

    • Drizzle with the ranch-water mixture and sprinkle with fresh parsley. Serve immediately.

Notes

  • Substitute potatoes with sweet potatoes for a slightly sweeter twist.
  • Adjust the spice level by using more or less buffalo sauce.
  • For a dairy-free option, use vegan cheese and ranch dressing.
