Ingredients
Scale
1 cup cottage cheese (full-fat or low-fat)
2 tablespoons unsweetened cocoa powder
2 tablespoons powdered erythritol (or your preferred low-carb sweetener)
1 teaspoon vanilla extract
2–3 tablespoons heavy cream (or unsweetened almond milk for a lighter option)
A pinch of salt
2 tablespoons dark chocolate (70% or higher), melted (optional for extra richness)
Instructions
In a blender or food processor, combine cottage cheese, cocoa powder, erythritol, vanilla extract, and a pinch of salt.
Blend until smooth and creamy, scraping the sides as needed.
Gradually add in the heavy cream or almond milk, continuing to blend until the mousse reaches your desired consistency.
If desired, fold in the melted dark chocolate for a richer flavor.
Spoon the mousse into serving bowls and refrigerate for at least 30 minutes to allow it to firm up.
Serve chilled and enjoy your low-carb chocolate mousse!
Notes
You can adjust the sweetness by adding more or less erythritol depending on your taste preference.
If you prefer a smoother texture, blend the mixture for a longer time.
Top with whipped cream or berries for an extra touch!
