Ingredients

Scale
  • 1 cup (225g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 3/4 cup (165g) packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/4 cups (280g) all-purpose flour
  • 1/2 cup (45g) unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups (150g) mini marshmallows (or 1 large marshmallow, cut into pieces)
  • 1/2 cup (90g) chocolate chips (semi-sweet or milk chocolate)
  • 1/4 cup (30g) powdered sugar (for rolling)

Instructions

  • Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
  • Make the Cookie Dough:
    • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
    • Beat in the egg and vanilla extract until fully combined.
  • Mix the Dry Ingredients:
    • In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Form the Dough Balls:
    • Scoop a tablespoon-sized portion of dough and flatten it slightly in the palm of your hand.
    • Place 3-4 mini marshmallows (or a piece of larger marshmallow) in the center of the flattened dough.
    • Wrap the dough around the marshmallows to form a ball, ensuring the marshmallow is completely sealed inside.
  • Roll in Powdered Sugar:
    • Roll the dough balls in powdered sugar, making sure they are coated well.
  • Bake the Cookies:
    • Place the dough balls on the prepared baking sheet about 2 inches apart.
    • Bake in the preheated oven for 8-10 minutes, or until the edges are set but the centers are still soft. The marshmallows inside will melt, creating a gooey, marshmallow-filled center.
  • Cool:
    • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  • Serve and Enjoy:
    • Serve these delicious, gooey cookies during the holiday season or any cozy gathering. The marshmallow center adds a delightful surprise with every bite!

Notes

  • To get the best gooey marshmallow effect, make sure the marshmallow is fully sealed inside the dough before baking.
  • You can use milk chocolate chips or semi-sweet chocolate chips, depending on your preference.
  • Store the cookies in an airtight container for up to a week.
