1 lb ground beef
1 tablespoon olive oil
1 small red onion, sliced
2 cloves garlic, minced
1 zucchini, sliced
1 red bell pepper, sliced
1 teaspoon dried oregano
1/2 teaspoon ground cumin
1/2 teaspoon paprika
Salt and black pepper, to taste
1/4 cup feta cheese, crumbled
2 tablespoons fresh parsley, chopped
1 tablespoon lemon juice
Cook the Ground Beef:
Heat a large skillet over medium-high heat. Add ground beef and cook for 7–8 minutes, breaking it apart with a spatula, until browned and fully cooked. Drain excess fat and transfer beef to a plate.
Sauté the Vegetables:
In the same skillet, heat olive oil over medium heat. Add sliced red onion and cook for 2–3 minutes until softened. Stir in minced garlic and cook for another 30 seconds.
Combine and Season:
Add sliced zucchini and red bell pepper. Cook for 5 minutes, until just tender. Return the ground beef to the skillet. Stir in oregano, cumin, paprika, salt, and black pepper. Cook for another 2–3 minutes, stirring to combine.
Finish and Serve:
Remove from heat and stir in lemon juice. Sprinkle with crumbled feta and fresh parsley before serving.
