Description

Messy Phyllo Pie is a rustic, golden-crisp dish made with crinkled layers of phyllo dough and a rich, cheesy custard filling. It’s easy, comforting, and perfect for brunch, dinner, or a savory snack.

  • 1 package phyllo dough (about 16 oz), thawed
  • 4 large eggs
  • 1 cup whole milk
  • 1/2 cup sour cream or Greek yogurt
  • 1 cup crumbled feta cheese
  • 1 cup shredded mozzarella or cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup melted butter or olive oil


Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a mixing bowl, whisk together eggs, milk, sour cream, feta, mozzarella, salt, and pepper until smooth.
  3. Unroll phyllo dough and keep covered with a damp towel to prevent drying.
  4. Scrunch or loosely ruffle each phyllo sheet and layer in the baking dish until bottom is covered.
  5. Pour half of the egg mixture over the first layer. Repeat layering with remaining phyllo sheets and pour the rest of the mixture over the top.
  6. Drizzle melted butter or olive oil evenly over the surface.
  7. Bake for 35–40 minutes or until golden and crisp on top and set in the center.
  8. Cool for 10 minutes before slicing and serving.
