- 1 pound ground beef
- 1 (15-ounce) can black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup salsa
- 1 packet taco seasoning or 2 tablespoons homemade
- 6 large flour tortillas, cut in halves or quarters
- 2 cups shredded cheddar cheese
- 1/2 cup sour cream
- 1 small onion, chopped
- 1 tablespoon olive oil
- Fresh cilantro, for garnish
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- Sauté chopped onion in olive oil over medium heat until soft. Add ground beef and cook until browned. Stir in taco seasoning, salsa, beans, and corn. Simmer for 5 minutes.
- Spoon a layer of meat mixture into the dish. Top with tortilla pieces to cover.
- Add a layer of cheese and dollops of sour cream. Repeat layers until ingredients are used, ending with cheese on top.
- Cover with foil and bake for 20 minutes. Uncover and bake another 10 minutes until bubbly and golden.
- Let rest for 5–10 minutes before slicing. Garnish with cilantro and extra sour cream, if desired.
- Serve hot with chips, guacamole, or salad.
