For the Pastry:

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, cold and cubed
  • 34 tablespoons ice water

For the Filling:

  • 1 cup thinly sliced pickles (dill pickles work great)
  • 1/4 cup cream cheese, softened
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Fresh dill, chopped (for garnish)

For the Egg Wash:

  • 1 egg, beaten
  • Optional: Sesame seeds or everything bagel seasoning for sprinkling

Instructions

  • Prepare the Pastry:
    In a mixing bowl, whisk together the flour and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
    Add ice water, one tablespoon at a time, mixing until the dough comes together. Form into a disk, wrap in plastic wrap, and chill for at least 30 minutes.
  • Preheat the Oven:
    Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • Prepare the Filling:
    In a small bowl, mix the cream cheese, Dijon mustard, garlic powder, and onion powder until smooth.
  • Roll and Cut the Pastry:
    On a lightly floured surface, roll out the chilled dough to about 1/8 inch thick. Cut into 4–6 inch circles using a cookie cutter or the rim of a glass.
  • Assemble the Galettes:
    Spread a small dollop of the cream cheese mixture in the center of each pastry circle. Top with a few pickle slices.
    Fold the edges of the pastry slightly over the filling, leaving the center exposed.
  • Add the Finishing Touches:
    Brush the edges of the pastry with the beaten egg. Sprinkle with sesame seeds or everything bagel seasoning, if desired.
  • Bake the Galettes:
    Place the galettes on the prepared baking sheet and bake for 20–25 minutes, or until the crust is golden brown and crispy.
  • Garnish and Serve:
    Let the galettes cool slightly. Garnish with fresh dill and serve warm or at room temperature.

Notes

  • Use any type of pickles you like, but dill pickles provide the best flavor for this recipe.
  • You can make the dough ahead of time and refrigerate it for up to 2 days.
