Instructions

  1. Prepare the Potatoes: Start by preheating your oven to 400°F (200°C). Wash the potatoes thoroughly, then poke a few holes in each potato with a fork to allow steam to escape. Bake them directly on the oven rack for about 45-60 minutes, or until they are tender when pierced with a fork.
  2. Cook the Filling: While the potatoes are baking, heat a skillet over medium heat. Add your ground meat and cook until browned. Drain any excess fat, then stir in the taco seasoning along with a splash of water. Allow it to simmer for a few minutes until the mixture thickens.
  3. Mix in Additional Ingredients: Once the meat is cooked, stir in the black beans and chopped tomatoes. Cook just long enough to warm the beans through and mix everything well, creating a flavorful filling.
  4. Stuff the Potatoes: When the potatoes are done baking, remove them from the oven and let them cool slightly. Carefully slice each potato in half lengthwise and gently scoop out some of the flesh to create a pocket. Fill each potato half with the taco filling, then sprinkle cheese on top.
