MOZZARELLA-STUFFED ONION RINGS WITH GARLIC BUTTER

Crispy, golden-fried onion rings stuffed with gooey mozzarella cheese and served with a rich garlic butter drizzle. The perfect indulgent appetizer or game-day snack.

  • 2 large yellow or white onions
  • 810 mozzarella sticks (string cheese or block cut into strips)
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 tablespoons milk
  • 1 1/2 cups panko breadcrumbs
  • 1/2 cup plain breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • Vegetable oil, for frying
  • 1/4 cup unsalted butter
  • 2 cloves garlic, minced
  • 1 tablespoon chopped parsley (optional)

Instructions

  1. Peel and slice the onions into 1/2-inch thick rings. Separate the layers and pair two similar-sized rings together, leaving space between them to insert cheese.
  2. Cut the mozzarella sticks to fit inside the space between the two onion rings. Place the smaller ring inside the larger one and fill the gap with mozzarella, pressing gently.
  3. In one bowl, place the flour. In another, whisk the eggs with milk. In a third, combine panko breadcrumbs, plain breadcrumbs, garlic powder, onion powder, salt, and pepper.
  4. Carefully dip each stuffed onion ring into the flour, shaking off excess. Then dip into the egg mixture, and finally coat in the breadcrumb mixture, pressing lightly to adhere. Repeat for a double coating if desired.
  5. Place prepared rings on a tray and freeze for at least 30 minutes to help them hold their shape during frying.
  6. Heat vegetable oil in a deep pan or fryer to 350°F (175°C). Fry the onion rings in batches for 2–3 minutes per side, or until golden brown and crispy. Drain on paper towels.
  7. In a small saucepan, melt the butter over medium heat. Add minced garlic and cook for 1–2 minutes until fragrant. Stir in parsley if using.
  8. Drizzle the hot garlic butter over the onion rings or serve it on the side for dipping.

Notes

  • Freezing the coated rings before frying prevents the cheese from melting too quickly and leaking out.
  • For extra flavor, add grated Parmesan cheese to the breadcrumb mixture.
  • These onion rings are best served immediately while hot and crispy.
