Description

Rich, chewy, and packed with wholesome ingredients, these no bake superfood brownies are the perfect healthy treat. They’re quick to make, no oven needed, and irresistibly chocolatey with the perfect crunch.


Ingredients

  • 2 cups Medjool Dates (pitted)
  • 1 cup Raw Walnuts
  • 1/2 cup Raw Almonds
  • 1/3 cup Unsweetened Cocoa Powder
  • 1 teaspoon Vanilla Extract
  • 1/4 teaspoon Sea Salt
  • 1/3 cup Dried Cranberries
  • 1/3 cup Chopped Pecans
  • 1/4 cup Shelled Pistachios
  • Flaky Sea Salt (optional, for topping)


Instructions

  1. Line an 8×8-inch pan with parchment paper and set aside.
  2. In a food processor, pulse the walnuts and almonds until finely chopped.
  3. Add the dates, cocoa powder, vanilla extract, and sea salt. Blend until the mixture forms a sticky dough.
  4. Transfer the mixture into a bowl and fold in cranberries, chopped pecans, and pistachios.
  5. Press the mixture firmly into the prepared pan and smooth the top with a spatula.
  6. Chill in the refrigerator for at least 1 hour or until firm.
  7. Sprinkle with flaky sea salt if desired, then slice into squares and serve.

Notes

  • Soak dates in warm water if they’re dry to help them blend more easily.
  • Toasting the nuts adds more depth of flavor.
  • Store brownies in an airtight container in the fridge or freezer.
  • Use parchment paper to easily lift the brownies out of the pan for clean slicing.
