Ingredients

1 stick butter (½ cup)
1 cup milk
¾ cup all-purpose flour
4 large eggs
½1 tablespoon sugar (optional)
Granulated sugar, for sprinkling
Honey, for serving
Whipped cream or fruit, for serving (optional)

Instructions

  • Preheat oven to 375°F (190°C). Generously grease a muffin pan.

  • In a medium saucepan, melt butter over medium heat. Add milk and bring to a low boil.

  • Add flour all at once and stir vigorously until the mixture forms a dough ball and pulls away from the sides of the pan.

  • Remove from heat and let the dough cool for 5 minutes.

  • Add eggs one at a time, beating well after each addition until the dough is smooth and glossy.

  • Spoon the dough evenly into greased muffin cups, filling about halfway. Sprinkle tops with sugar.

  • Bake for 30 minutes, or until puffs are golden brown and puffed up.

 

  • Serve warm, drizzled with honey and optionally topped with whipped cream or fresh fruit.

Notes

  • Don’t open the oven while baking, or they may deflate.

  • Serve immediately for best texture.

 

  • You can also bake them in ramekins or a mini muffin pan for bite-sized puffs.
