Ingredients

Scale
  • 1 pre-baked 9-inch pie crust
  • ¼ cup butter
  • 1 cup granulated sugar
  • ¼ cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 2 cups milk
  • 3 large egg yolks
  • 1 teaspoon vanilla extract
  • 3 large egg whites
  • ¼ teaspoon cream of tartar
  • ½ cup granulated sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Melt the butter in a medium saucepan over medium heat.
  3. In a bowl, whisk together the sugar, flour, and cocoa powder.
  4. Gradually add the dry mixture to the melted butter, stirring to prevent lumps.
  5. Slowly add the milk while stirring until smooth.
  6. Cook the mixture for 5-7 minutes, stirring constantly, until thickened. Remove from heat.
  7. In a separate bowl, whisk the egg yolks. Add a spoonful of the hot mixture to temper the yolks, then stir them back into the saucepan.
  8. Return to heat and cook for 2-3 minutes, stirring constantly. Stir in vanilla extract and remove from heat.
  9. Pour the chocolate filling into the pre-baked pie crust and spread evenly.
  10. In a clean bowl, beat egg whites and cream of tartar until soft peaks form.
  11. Add sugar gradually and beat until stiff peaks form.
  12. Spread meringue over the filling, sealing the edges.
  13. Bake for 10-12 minutes, until meringue is golden brown.
  14. Let the pie cool completely before serving.

Notes

  • Ensure meringue touches crust edges to prevent shrinking.
  • Cool completely to allow the filling to set properly.
  • Store leftovers in the refrigerator for up to 3 days.
