This creamy and cheesy one-pot pasta dish combines savory ground beef, tangy ranch seasoning, and sharp cheddar cheese for a comforting meal that’s easy to prepare and even easier to clean up.

Ingredients

Scale
  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet (1 oz) ranch seasoning mix
  • 2 cups beef broth
  • 1 cup milk
  • 8 oz pasta (e.g., rotini or penne)
  • 2 cups shredded sharp cheddar cheese
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley or chives, chopped (optional, for garnish)

Instructions

  • Sauté the Beef and Onions:
    • In a large pot or deep skillet over medium heat, add the ground beef and diced onion.
    • Cook until the beef is browned and the onion is translucent, about 5-7 minutes.
    • Drain any excess fat.
  • Add Garlic and Seasoning:
    • Stir in the minced garlic and cook for an additional 1 minute until fragrant.
    • Sprinkle the ranch seasoning mix over the beef mixture and stir to combine.
  • Add Liquids and Pasta:
    • Pour in the beef broth and milk, stirring to combine.
    • Bring the mixture to a boil.
    • Add the pasta, ensuring it’s submerged in the liquid.
  • Cook the Pasta:
    • Reduce the heat to a simmer, cover, and cook for 10-12 minutes, stirring occasionally, until the pasta is al dente and most of the liquid has been absorbed.
  • Add Cheese and Serve:
    • Stir in the shredded cheddar cheese until melted and the sauce is creamy.
    • Season with salt and freshly ground black pepper to taste.
    • Garnish with chopped fresh parsley or chives if desired.
    • Serve hot.

Notes

  • For a spicier kick, consider adding a pinch of red pepper flakes or a dash of hot sauce.
  • Feel free to use your preferred pasta shape; just adjust the cooking time accordingly.
  • This dish pairs well with a simple green salad or steamed vegetables for a complete meal.
