Ingredients

Scale

Proteins and Pasta

  • 2 boneless chicken breasts
  • 1 cup orzo pasta

Liquids and Dairy

  • 3 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese

Vegetables and Aromatics

  • 3 garlic cloves, minced
  • 1/3 cup sun-dried tomatoes, chopped

Herbs and Seasonings

  • 1 teaspoon fresh thyme leaves (or your choice of basil or parsley)
  • Salt, to taste
  • Black pepper, to taste

Fats

  • 2 tablespoons olive oil
  • 1 tablespoon butter

Instructions

  1. Prepare and Sauté the Chicken: Season the chicken breasts with salt and pepper. Heat the olive oil in a large skillet or deep pan over medium-high heat. Sear the chicken on both sides until golden brown but not fully cooked through, about 3-4 minutes per side. Remove the chicken from the pan and set aside.
  2. Sauté Aromatics and Sun-Dried Tomatoes: Lower the heat to medium and add butter to the same pot. Add minced garlic and chopped sun-dried tomatoes, stirring until fragrant and soft, approximately 2 minutes, to release rich flavors for the sauce.
  3. Add Broth, Orzo, and Herbs: Pour in the chicken broth, then add the orzo pasta and fresh thyme (or your chosen herbs). Stir to combine, ensuring the orzo is fully submerged. Bring the mixture to a simmer, then reduce the heat to low.
  4. Return Chicken and Simmer: Nestle the seared chicken breasts back into the pot on top of the orzo mixture. Cover and let simmer for 10-12 minutes until the chicken is fully cooked and orzo is tender.
  5. Finish with Cream and Cheese: Stir in the heavy cream and freshly grated Parmesan cheese. Allow the sauce to thicken slightly, coating the chicken and orzo with creamy richness. Adjust seasoning with salt and pepper to taste.

Notes

  • Use room temperature chicken to ensure even cooking and prevent toughness.
  • Don’t skip searing the chicken first to add depth of flavor.
  • Monitor liquid levels during cooking; add more chicken broth if orzo starts to dry out before it’s cooked.
  • Fresh herbs brighten the dish significantly more than dried herbs.
  • Let the dish rest for a few minutes off heat after cooking to thicken the sauce perfectly.
