These ooey gooey marshmallow and chocolate-topped cookie bars are the perfect treat for S’mores season! With all the delicious flavors of classic s’mores packed into a bar, they’re sure to satisfy your cravings for something sweet and indulgent. 🍪

Ingredients

  • 320 g unsalted butter
  • 320 g brown sugar
  • 160 g granulated sugar
  • 4 g salt
  • 4 eggs
  • 8 g vanilla extract
  • 340 g all-purpose flour
  • 1 cup chocolate chips
  • 1 cup mini marshmallows
  • 6 crushed graham crackers

Instructions

  • Prepare the Oven and Pan:
    Preheat your oven to 329°F (165°C). Line an 8×8-inch baking pan with parchment paper to prevent sticking.
  • Brown the Butter:
    In a saucepan, melt the butter over medium heat until it turns golden brown and develops a nutty aroma. Set it aside to cool slightly.
  • Make the Cookie Dough:
    In a large mixing bowl, combine the browned butter with the brown sugar, granulated sugar, and salt. Mix until smooth and well combined.
    Whisk in the eggs and vanilla extract until fully incorporated.
  • Add the Dry Ingredients:
    Gently fold in the flour, leaving a few streaks of flour visible. Be careful not to overmix. Then, fold in the chocolate chips, mini marshmallows, and crushed graham crackers until evenly distributed.
  • Bake the Cookie Bars:
    Pour the batter into the prepared pan, spreading it out evenly. Bake for 30 minutes.
  • Add Extra Toppings and Finish Baking:
    Once baked, remove the pan from the oven and sprinkle additional chocolate chips and mini marshmallows on top. Return to the oven for an additional 5 minutes to melt the chocolate and marshmallows.
    For a toasted finish, broil for 30 seconds or lightly toast the marshmallows using a blow torch.
  • Cool and Slice:
    Allow the bars to cool in the pan before cutting them into squares.
