- 1 cup dry orzo pasta
- 1 bunch asparagus, trimmed and cut into 1-inch pieces
- 3/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- Zest of 1 lemon
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Bring a large pot of salted water to a boil.
- Cook the orzo according to package instructions. Add the asparagus during the last 2 minutes of cooking.
- Drain the orzo and asparagus, reserving a little pasta water.
- Transfer to a mixing bowl. Add olive oil, lemon zest, feta, parsley, salt, and pepper.
- Toss gently to combine, adding a splash of pasta water if needed to help everything come together.
- Serve warm or at room temperature.
