Description

Pancake Sausage Casserole is a fluffy, sweet and savory breakfast bake made with pancake batter and crumbled sausage. Baked in one dish, it slices into hearty squares that are perfect for brunch, holidays, or meal prep mornings.


Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups milk
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 pound breakfast sausage, cooked and crumbled


Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  2. Brown sausage in a skillet over medium heat until fully cooked. Drain excess fat.
  3. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  4. In another bowl, whisk milk, eggs, and melted butter.
  5. Combine wet and dry ingredients and mix just until combined.
  6. Spread cooked sausage evenly in the baking dish.
  7. Pour pancake batter evenly over sausage.
  8. Bake for 30 to 35 minutes until golden brown and set in the center.
  9. Rest 5 minutes before slicing and serving.

Notes

  • Do not overmix the batter to keep it fluffy.
  • Drain sausage thoroughly to avoid excess grease.
  • Drizzle with maple syrup before serving if desired.
