Description
These patty melt toasties are crispy on the outside and loaded with juicy beef, sweet caramelized onions, and melty cheese inside. A comforting twist on the diner classic, made simple and snackable.

- 1 pound ground beef
- Salt and pepper, to taste
- 1 large yellow onion, thinly sliced
- 4 tablespoons butter
- 8 slices rye or sourdough bread
- 1 cup grated cheddar cheese
- 1 cup grated Swiss cheese
- Optional: Thousand Island dressing or Dijon mustard
Instructions
- Heat skillet over medium-low and melt 1 tablespoon butter. Add onions and cook slowly until golden and caramelized, about 10–15 minutes. Set aside.
- Season ground beef with salt and pepper. Form into 4 thin patties roughly the shape of your bread.
- Cook patties in a skillet over medium heat for 3–4 minutes per side until cooked through. Remove and set aside.
- Butter one side of each slice of bread. On the unbuttered side, layer cheddar, beef patty, onions, Swiss, and top with another slice of bread, butter side out.
- In a clean skillet, grill each sandwich over medium heat, pressing gently, 3–4 minutes per side until bread is golden and cheese is melted.
- Slice and serve hot with pickles or chips.
Notes
- Use grated cheese for faster, even melting.
- Let patties rest before assembling to prevent soggy bread.
- Use mayo instead of butter for an extra golden crust.
- Add tomato or jalapeño slices for extra flavor.
