Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 1/2 cups fresh peaches, peeled and diced
  • 1 tablespoon cornstarch


Instructions

  1. Preheat your oven to 350°F and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking powder, salt, and cinnamon.
  3. In a separate bowl, cream butter, granulated sugar, and brown sugar until fluffy. Beat in the egg and vanilla extract.
  4. In a small saucepan over medium heat, combine peaches and cornstarch. Cook until thickened, about 5–6 minutes, then let cool.
  5. Scoop cookie dough onto the prepared baking sheets. Press an indentation in the center of each and fill with a small spoonful of peach filling.
  6. Bake for 12–14 minutes until edges are golden and centers are set.
  7. Cool on baking sheet for 5 minutes before transferring to a cooling rack. Serve warm or at room temperature.
