- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1/2 cup light brown sugar, packed
- 1 large egg
- 2 teaspoons vanilla extract
- 1 1/2 cups fresh peaches, peeled and diced
- 1 tablespoon cornstarch
Instructions
- Preheat your oven to 350°F and line two baking sheets with parchment paper.
- In a bowl, whisk together flour, baking powder, salt, and cinnamon.
- In a separate bowl, cream butter, granulated sugar, and brown sugar until fluffy. Beat in the egg and vanilla extract.
- In a small saucepan over medium heat, combine peaches and cornstarch. Cook until thickened, about 5–6 minutes, then let cool.
- Scoop cookie dough onto the prepared baking sheets. Press an indentation in the center of each and fill with a small spoonful of peach filling.
- Bake for 12–14 minutes until edges are golden and centers are set.
- Cool on baking sheet for 5 minutes before transferring to a cooling rack. Serve warm or at room temperature.
