Instructions
- Prepare the Peaches: Grill the peaches for a few minutes on each side for a smoky flavor, or simply dice them fresh.
- Blend Everything Together: In a blender or food processor, combine the peaches, honey, Dijon mustard, white balsamic vinegar, olive oil, tamari (or soy sauce), garlic, salt, and pepper. Blend until smooth and creamy.
- Adjust the Consistency: If the vinaigrette is too thick, add a splash of water or extra vinegar until you reach your desired consistency.
- Store and Serve: Transfer the vinaigrette to an airtight container and refrigerate. While it’s ready immediately, letting it sit for an hour will deepen the flavors.
