This Peach Honey Dijon Balsamic Vinaigrette is a delightful, sweet and tangy salad dressing with a touch of umami. Made with fresh, ripe peaches, honey, Dijon mustard, and white balsamic vinegar, it offers the perfect balance of flavor for your salads and veggies.

  • 2 ripe peaches, diced
  • 2 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 2 tablespoons white balsamic vinegar (or cider vinegar)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon tamari or soy sauce
  • 1 clove garlic, minced
  • Salt and pepper, to taste

Instructions

  • Prepare the Peaches: Grill the peaches for a few minutes on each side for a smoky flavor, or simply dice them fresh.
  • Blend Everything Together: In a blender or food processor, combine the peaches, honey, Dijon mustard, white balsamic vinegar, olive oil, tamari (or soy sauce), garlic, salt, and pepper. Blend until smooth and creamy.
  • Adjust the Consistency: If the vinaigrette is too thick, add a splash of water or extra vinegar until you reach your desired consistency.
  • Store and Serve: Transfer the vinaigrette to an airtight container and refrigerate. While it’s ready immediately, letting it sit for an hour will deepen the flavors.
