These peanut butter s’mores sandwich cookies are an irresistible combination of soft peanut butter cookies, melty chocolate, and gooey marshmallow—perfect for any occasion!

Ingredients

Scale
  • 1 cup creamy peanut butter
  • ½ cup unsalted butter (softened)
  • ½ cup granulated sugar
  • ½ cup brown sugar (packed)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 ¼ cups all-purpose flour
  • ½ tsp baking soda
  • Pinch of salt
  • Large marshmallows (halved)
  • Chocolate bars or chocolate spread (for filling)

Instructions

  • Preheat the Oven:
    • Heat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Prepare the Dough:
    • In a large bowl, blend the peanut butter, softened butter, granulated sugar, and brown sugar until smooth and airy.
    • Mix in the egg and vanilla extract until well-incorporated.
  • Combine the Dry Ingredients:
    • In another bowl, combine the flour, baking soda, and salt.
    • Gradually add the dry ingredients into the wet mixture, mixing until a dough forms.
  • Shape the Cookies:
    • Shape the dough into small spheres and place them on the prepared baking sheet. Flatten each ball with a fork to create a crisscross pattern.
  • Bake the Cookies:
    • Bake for about 10-12 minutes or until the cookies turn golden brown. Remove from the oven and allow to cool completely on a wire rack.
  • Assemble the Sandwiches:
    • Once the cookies have cooled, spread a layer of chocolate on one cookie. Place a halved marshmallow on top and microwave for 10-15 seconds to slightly melt the marshmallow.
    • Top with another cookie and press lightly to form a sandwich.
  • Serve and Enjoy:
    • Allow the cookies to set for a few minutes so the marshmallow and chocolate cool and firm up. Enjoy your gooey, delicious s’mores sandwich cookies!

Notes

  • If you’re using chocolate spread, be sure to spread it thinly to avoid making the cookies too messy.
  • You can customize the size of the cookies by adjusting the dough spheres, but be mindful of the baking time.
  • If you like extra gooey marshmallows, microwave the marshmallow for a little longer, but be careful not to overdo it!
